Author Information

Isao Okunishi is the Director of Development at Kinjirushi Co., Ltd. and head of its Functional Ingredients Research Institute. After completing his Master's degree in Science at Nagoya University in 1995, he joined Kinjirushi in 1998, where he has led groundbreaking research on the functional properties of wasabi. His work has contributed to the development of health supplements and cosmetics based on wasabi's natural compounds. In 2022, he earned his Ph.D. from Kagoshima University.
