OverviewA manuscript preserved at the National Library of Naples contains a curious cookbook about southern Italian cuisine titled Apparecchi diversi da mangiare. Written in 1524, it consists of 86 recipes, presented here in a new critical edition. The text is significant for its lexicon related to food, starting with many gastronomic terms that are typical of Italy's southern cuisine, particularly Neapolitan or Campanian, such as picza, ceppola ('zeppola'), provola, susamelli, casocavallo, strangolaprievete and so on, many of which are recorded for the first time in this cookbook.
