Overview

A humorous, entertaining, and informative cookbook primarily devoted to luscious kugel, the hearty party food and Jewish cuisine's answer to the casserole. Vegetarians love it. Gluten-free users and dieters are not forgotten. The collection of traditional and new, easy-to-follow recipes for appetizers and small bites through dessert to complete full meals will tempt young and old alike. The book includes everything you always wanted to know about kugel but did not know you wanted to know. All three or four (if diphthong is used) pronunciations, definitions, and translations of the word kugel are seen in The Story and History of Kugel chapters. The Kugel Ingredient Shopping List, from the basics to beyond, will amaze. However, one does not need to have all 100 or more ingredients on hand to be considered as a kugel maven. Menus in the Holidays and Menus chapter help readers to make every occasion and celebration the best that it can be. A suggested side dish or dessert kugel appears with every menu and each entrEe. Read between the recipes and you will find humor, family stories, trivia, culinary hints and tips. Table of contents, index and glossaries are included. 260 pages. Illustrated.

Author Information

Nina was born in Philadelphia, PA. Her parents were First-generation Americans. All grandparents were Lithuanian-Russian immigrants (Ashkenazic Litvaks) who first touched American soil at Ellis Island. Their cooking-style prevailed. Culinary arts training for Nina began at a young age while watching her mother and bubbe (grandmother) prepare delicacies of Jewish cuisine. Kugel was frequently part of family gathering meals. As a teenager, she enjoyed enhancing recipes, and that has never stopped. Nina's background is in business and fine art. Her career path included publishing with Smylan Reed Books, and she is the author of several Jewish cookbooks featuring kugel. She taught cooking to all ages and has catered large parties. In addition to her love of cooking and baking, fiber arts and mah jongg, she has performed with community and synagogue choirs and Sweet Adelines International choruses. Her two daughters and three grandchildren are singers and instrumentalists. Nina attributes their vocal abilities to the fact that they were virtually weaned on kugel. Currently residing in central New Jersey, residences have been in southern NJ, FLA, SC, PA, AZ, TX. Travels have taken her to almost every state in the USA, and she has visited many countries around the world while scrutinizing their cuisines. This kugel mavin (expert) is the world's premier Kugelologist and the first author to write published cookbooks that are primarily devoted to kugel.
