Excellent book.. This book is simply astonishing! I love the examples! It is an extraordinary quality. The pages are thick so nothing goes onto different pages. Many thanks to the author for giving us such a beautiful book. Love this book! Great sous vide recipes This book has a lot of info that will be good for a newbie to Sous Vide-particularly cooks that just can't get their heads around cooking foods for 4-8 hours(why such a difference in time?). There are several charts that while they give ranges of cooking time, also recommend the best amount of time. I've had my book for about 2 weeks and already it dog-eared completely. Fantastic Book! What I liked about this device is that it does that which is impossible to do by any other means. For example, you cannot make a steak consistently the same degree of doneness from surface to surface. The Sous Vide will do this, and then you sear the very outer edges and get a perfect steak. It's incredible! Excellent I loved the Sous Vide for the outcome of the steak I was cooking. So tender & easy for me even though it took much longer than I expected. This was my first experience cooking Sous Vide.
