Overview

The postharvest physiology of fresh produce has become an important subdivision of both plant physiology and horticulture. This is a broad-based textbook which deals with effective methods for the conservation of fruit, vegetables and ornamentals during the stage that occurs between harvesting and purchase by the final consumer. This new edition has been substantially updated to review the numerous advances in our understanding of postharvest biology and changes in modern industry practices which have occurred since publication of the last edition in 1989. It has been expanded to include ornamental produce (cut flowers and foliage), extended coverage of handling, packaging and distribution issues and more information relevant to developing countries.
