Overview

Plant-Based diet started in 1942 as a resource guide for the rural poor in the U.S. The American Farm Bureau Federation and the U.S. Department of Agriculture have been promoting a plant-based diet for the past 70 years as a way to sustainably feed the world population. After World War II, people turned to more meat-based diets with fewer carbohydrates and grains, which meant that grain price supports were even more critical to maintaining profitability in farm production. The USDA's Grain-for-Freedom campaign was launched in 1942 with posters on buses and billboards showing a farmer holding an ear of corn, exclaiming Give this man freedom from hunger. Buy this poster to help save him from starvation! All those years of advertising have not changed Americans' preference for meat, but they did teach them that the food they eat is directly linked with their health, and therefore their general well-being. This book covers: - Breakfast - Lunch - Dinner - Snacks - Desserts And much more... The 1946 poster campaign showed that Americans were eating less meat -- but more bread, potatoes and milk. Today, meat consumption is down to 23 per cent of calories consumed in the U.S., 12 per cent lower than in 1966. [NOTE: Some experts link the rise of diabetes and obesity in America to a reduction in fibre intake due to lower intakes of whole grains and fruits. The USDA's 4-a-Day recommendation for fruits and vegetables is well-known to have a negligible effect on the health of Americans, most of whom don't even meet the minimum recommendations.
