OverviewAt the Central National Library in Florence, there is an anonymous manuscript, dating back to the second half of the 17th century, that contains no less than 386 recipes. Previously preserved at the convent of SS. Annunziata, this modest collection of writings, possibly of courtly origin, is dotted with references to members of the Medici family in connection with descriptions of meals (desinate), pointing to them as the source of gastronomic customs for various preparations and accompanied by detailed lists of dishes. In this extensive cookbook, published here for the first time, the recipe for cioccolata (chocolate) stands out as one of the earliest and most accurately documented, along with those for birra (beer) and sorbetti (sherbets) - the latter strikingly close to the Arab tradition - as well as references to eminently Tuscan products.
