OverviewLignan sesaminol triglucoside is a bioactive compound in sesame milk. It has the potential for antioxidant activity enhancement. Lignan glucoside showed higher antioxidant activity after hydrolysis using β-glucoside. Lactobacillus plantarum Dad 13 which was isolated from dadih, a traditional fermentation product of buffalo milk from West Sumatra, Indonesia was used as lactic acid bacteria. Research on evaluation of antioxidant source in sesame milk which potential to be improved, the potential of sesame milk as a medium for L. plantarum Dad 13 growth and β-glucosidase production, the chemical changes during fermentation of sesame milk using L. plantarum Dad 13 at 37 ˚C for 18 h, and the effect of hydrolysis of sesaminol glucoside lignan crude extract from defatted sesame seed by β-glucosidase.
