The award-winning Brian Silva first started tending bar in the Colonnade Hotel in Boston in 1983 before moving to London in 1989. Since then, he has tended the grandest bars in London - the private members' club, Home House; the Connaught Hotel; Rules, London's oldest restaurant; and 5 Hertford Street, Robin Birley's club in Mayfair.
