Chef Philippe Parola, Commandeur des Cordon Bleu de France , has spent decades working with invasive species. Over the years, through all of his experiences, cooking wild game and exotic animal meat became his specialty. He has prepared dishes with hundreds of species. Naturally, his experiences and recipe successes eventually led him to consider invasive species as a potential food source and a means of diminishing their population.
